  • Arriba The name given to the distinctive flavor of Ecuadorian Nacional, reminiscent of orange blossom and jasmine. Comes from the cry given to cocoa merchants as they entered the harbor in Guayaquil to go up-river (Spanish: arriba) to get the cocoa they were seeking.

  • Chocolatier A chocolatier is a person or company who/that makes chocolate (from beans or liquor).
  • Confectioner (French: Confiseur) A confectioner (French: confiseur) is a person or company who/that takes chocolate made by a chocolatier and makes confections (bonnbons, candies, etc). Sometimes referred to as a fondeur.

U

  • Universal The name given to an integrated cocoa grinder, refiner, and conche capable of producing finished chocolate from nib (or liquor) in the same device.
